Mushroom Quesadilla, Rajas Quesadilla, and Picadillo Quesadilla
Picadillo
Ingredients
1 ½ lba ground beef
1 large potato chopped in small squares
2 garlic cloves
¼ chopped onion
Salt
Process:
Peel the potato and chop into small squares (as shown in video). Chop the garlic cloves into minced garlic as well as the onion..
Place oil to heat in a pan. Once hot, add the garlic and onion. Once the onion starts to brown, add the potatoes and shortly after add the ground beef since you want both to cook at the same time. Stir and place lid on pan. Once the steak and potato are fully cooked, turn off stove and now the filling is ready.
Rajas & Cheese
Ingredients
4 Poblano Peppers: roasted, peeled and washed/ cut into strips
¾ of an onion
1 garlic clove
Salt
Oaxaca cheese
Process:
Once you’ve roasted the poblano peppers and peeled them and washed them, slice the pepper in half and slice thin strips. Then, chop the onion into thin slices (as shown in video) and chop two garlic cloves.
Place oil to heat in a pan. Once hot, add the garlic and stir, then the onion and once again stir. Once the onion starts to look transparent, add the poblano pepper strips and stir. Once the peppers turn soft and change color tone, this filling is ready.
Mushroom & Cheese:
Ingredients
2 cups of chopped mushrooms
½ onion
4 garlic cloves
Chopped Epazote
Salt
Shredded Oaxaca cheese
Process:
Chop the garlic into very thin squared so that its almost minced garlic and chop the onion into small squares.Add oil in a pan, pour in the garlic once the oil is hot and add the chopped onion. Once the onions start to look transparent add in the chopped mushroom (as shown in video). Let it season. Some mushrooms may run the risk of being poisoned, so to be on the safe side, always add a garlic clove. If the garlic clove turns dark or black,the mushroom is poisoned. If the color is the same,then the mushroom is good to eat. After about 3 minutes, add the chopped epazote in and stir. Then stir for about 5 minutes and now this feeling is ready.
Masa (dough)
Ingredients
4 cups of corn flour
1 tsp de baking powder
2 tsps of salt
Warm water
Place the corn flour in a large bowl. Add the salt and baking powder (the baking powder helps give the tortillas a fluffy nice texture). The add the watm water slowly as you see fit.
Cooking Oil to fry the quesadillas
Process:
Roll the flour once it has become mass into a ball (about the size of a golf ball). Place in a the tortilla maker with a plastic sheet on and cover with the plastic sheet. Then, flatten the ball with the tortilla maker until it looks like a tortilla (as shown in video). Then add the stuffing of your choice in one corner of the tortilla and the the plastic fold the tortilla into a quesadilla and gently press on the corners to seal. Place oil to fry the quesadillas on a pan to heat. Once the oil is very hot, add the quesadilla in. Once one side turns a golden brown, flip the quesadilla. Once that side is also a golden brown, the quesadilla is ready. Take it out of the oil and place on a napkin to absorb any excess oil.
Green Salsa:
Ingredients
10-12 green tomatoes
5 Serrano Peppers
1 garlic clove
Salt
Drizzle of water
Place the garlic clove and a hint of water into the blender and blend first. Then, add the Serrano peppers, green tomatoes, and a pinch of salt. Take to the blender. For blending, only turn on and off repeatedly so that there’s still small chunks of tomato.
Now that your quesadilla is ready add the salsa and sour cream if you’d like. Time to eat! Bon appetit!
